From Grain to Glass

Just before the first bottling, Master Distiller Craig Beam and Assistant Master Distiller Terry Ballard sat down with Chris Zaborowski, Executive Bourbon Steward, Stave & Thief Society to share notes on the nose, palate, and finish of Jackson Purchase Bourbon.

The burst of flavors continues to unfold with each sip. The initial cherry and caramel sweetness is complemented by the gentle warmth of bananas, creating a rich and inviting profile. As the bourbon coats the palate, hints of cinnamon with a touch of vanilla emerge, adding a layer of spice that balances the sweetness to perfection.   

The color, reminiscent of an amber sunset, reflects its age and promises depth.

The aroma is a delightful medley that captures the essence of the bourbon – a sweet bouquet of fruits combined with warm baking spices. The oak influence is subtle yet present, providing a foundation that supports the other flavors without overpowering them.

As the bourbon settles, the finish lingers softly, leaving a nice warmth that invites another sip. The combination of sweet and spicy elements ensures that this bourbon is not only enjoyable neat but also versatile enough to elevate classic cocktails. Although neat would be my way of enjoying!

Surprisingly rich in color—reminiscent of Oloroso sherry, deep and vibrant. On the nose, the first note that carries through is cinnamon, followed by a crisp apple aroma. It holds beautifully to the glass, showing good structure.

The palate opens with warm cinnamon, honey, and a pleasant spice. A subtle hint of apple tucks in the background.

Mouthfeel is warm but smooth—remarkably easygoing for 118 proof.

The finish lingers with a cozy, candied apple and cinnamon warmth, like a spiced dessert fresh from the oven.

In the glass with a slight swirl, the whiskey showed great viscosity with “legs” that slid down the sides of the glass. This gave great promise that this would be a rich, mouth-filling bourbon. 

The aroma was initially fruity, with hints of baked apple and pear. It had a honeyed sweetness that reminded me of molasses. Then, there was a very pleasant mint and clove element. The more I worked it, the more it delivered, and it left me with a bit of toasted marshmallow, which was very inviting.

The initial entry was warm, toasted oak with a nutty, roasted almond. The overall mouthfeel was rich, round, and viscous, as the visual swirl had indicated that it might be. There is a very nice balance of the sweet, oily flavor and the toasted woodiness. The finish had a bit of smokiness/bonfire that made for a long, warm, pleasant finish. No astringency, nor burn, which was a very pleasant surprise given the proof.
